Harvested using pneumatic shakers, they are cold-pressed within the day of harvest to preserve all their organoleptic qualities.

Soil Type
White calcareous matrix soil, with medium-textured composition.
Altitude
30-60 meters above sea level with gentle slopes facing the Mediterranean Sea, from which they receive the fresh morning breezes.
Production Location
Contrada Coste Fredde, Noto area – in the heart of the Val di Noto.
Cultivar
Verdese, Nocellare, Biancolilla – native Sicilian varieties.
Aroma and Taste Notes
Medium fruity, with a distinctive aroma of green tomato and freshly cut grass.
The taste confirms the aromatic notes, with a moderate sensation of bitterness and spiciness. Character: very fresh, intense and pleasant.
